fix(blog): replace retired self-host upgrade URL with /docs/self-host

Changes

Problem

• Blog posts link to /docs/runbook/upgrading-posthog, a retired route that now redirects to /docs/self-host.
• A reader who navigates directly recovers through the redirect, but Gatsby prefetches the old path's page-data and gets a 404 — a failed first-party request every time such a link enters the viewport.
• An inbox report measured repeatable prefetch 404s from first-party referrers over 7 days.

Fix

• Replace the link target with /docs/self-host across all blog posts (44 files).
• The report named 5 posts (the ones with measured traffic), but the same stale link sits in ~44 posts — the same root cause. Fixing only the 5 leaves the rest to produce the identical 404 as they get traffic, so this change covers the whole class.
• The vercel.json redirect stays in place for external bookmarks.

Out of scope

• A few contents/docs/ pages also link to the old path (self-host/index.mdx, migrate/migrate-to-cloud.mdx, js-snippets/pineapple-mode.md). They are a different context from the reported blog symptom and are left for a separate change.
